Andy and I attended a computer conference in Las Vegas in October 2000. Andy's co-worker Bill Couch and his wife Vicki went with us. We all stayed at the Bellagio hotel where we saw Penn and Teller, comedian Dana Carvey and Cirque du Soleil's "O" show. After the conference the four of us spent four days and nights on a houseboat that we rented at Echo Bay on Lake Mead. We cruised around the lake and beached the boat in coves along the way for hiking and sleeping. We did all our own cooking. We bought food in town nearby and boarded the houseboat. We thought we'd probably find a place to eat somewhere along the way and maybe stop by a marina and pick up a few more supplies. As it turns out, we never saw another marina or anywhere to eat -- it's desolate country out there. Luckily we had bought enough food, but we ate almost everything we had. We used the gas grill on the boat several nights to grill steaks and pork chops -- good eating. The funniest part was the 10# bag of Idaho potatoes that we bought for 79 cents. We wanted some potatoes for baking and that bag was cheaper than the 5# bag so we said we'd just feed the rest to the animals or something. We used the entire bag -- cooked potatoes every night -- baked, fried, sliced, grilled, etc. It got to be a real joke as we went further each day and didn't see any store or restaurant -- hey, we've still got potatoes -- how shall we cook them tonight? The last night we added potatoes and leftovers to two cans of soup and had a great dinner. We think our Irish ancestors would have been proud. By the time we finished we all agreed that we didn't want to see another potato for awhile. On our way back to the airport we went through Valley of Fire State Park and took a short hike. Content and
